Can someone please xplain to me the difference between armour, health

When I'm comparing gear in-game I often get confused as to which is better. For example, I might be deciding between two different knee pads, Knee Pad 1 will have 22 Armour and Knee Pad 2 only 10 Armour. But Knee Pad 2 will add 16 Stamina points where as Knee Pad 1 won't add any. So I get confused as to which is better for me. Furthermore, where does health come into all of this? Can someone please xplain to me the difference between armour, health and stamina please?

 
For me personally I will always equip the gear that gives me the best specs to my DPS, Health and Tech. The armour rating off all gear adds up to give your character a total rating which is then used to calculate how much damage you defer. So if I can get more stamina i would gladly sacrifice the the 6 armour points. When in your inventory, look at the top taps and select character. There you will find a comprehensive list of how your build is going. How much damage you defer, bonus damage done to elites etc. 

But I have to admit, I struggle to get a good gear balance as one piece always help one tree and break another one completely. 

 
i just go by the over all score. really haven't paid attention to the indivisual pieces of armor. what ever gives me the best over all score, i stick with it. sometimes i had blues mixed with greens that gave me a better score than all blues. 

 
Well each item gives Damage, Stamina (Health), and Tech. So you figure Damage will increase over damage, so focus that if you're going DPS. Stamina will increase your health, or over tankyness, so go that if you wanna be a bullet sponge. And Tech will increase the damage done by your tech (turrets, sticky grenades, etc.)

The way I look at it, because I wondered about this for some time, was think about it in percentages.

like, don't sacrifice 10% your health to increase your armor by 2%. BUT, do sacrifice a 2% health to increase your armor by 10%. That's my mindset, I'm too lazy to actually do the math while I'm playing ?

I may be wrong, and someone who has looked into it more than I, go ahead and correct me.

that's how look at it for the most part.. also consider the attributes when selecting and consider what type of role you want to focus on (medic..support.. etc.. ) and what your squadmates are.
